    Lovely Rebekkah (sp?)–
    What beautiful missives about all the incredible food and drink you are so lucky to have in Tokyo! Makes me want to catch the next flight to Japan! However, on my way to Slovenia to feed my obsession with their “orange” wines. I am so enjoying reading this- you are a fantastic writer and your sake knowledge blows me away! I can’t wait to hear more! I hope everything is well with you! Hopefully see you sooner than later.

      Thanks for your lovely comments. It means a lot coming from you: a fellow alumni. I really appreciate your support. Will the ‘sandwich’ be reunited next January? I’m not sure if I can make it through all the frigid kura tours with you!

      Hi Paul,
      Although I prefer homemade to commercially available options, I like Fushimi’s moromi tofu misozuke, which is aged for 3mths.
      Hiden Toubei’s range is aged for 6-7 months and comes in a variety of flavours (I like the yuzu koshu). It’s available in most department store food halls & some supermarkets, or from Kumamoto antennae shops, but online is easiest if you live in a Japan.

    Hi, Rebekah,

    Thanks to NHK World, I was able to enjoy your reporting on “Tokyo Eye” tonight and learn more about sake and wine in Tokyo. Over the past 30 years, I’ve certainly done my best to prop up the Japanese economy through my sake imbibing, but there’s always more to learn, such as Koyama Shuzo (I’ll check it out in May). In addition, I’ve learned of your great looking site, which I’ll explore in more detail and mine for ideas for my next trip.

    Keep up the great work!

    My daughter spent a semester during her junior year in college in N.Z. and had nothing but wonderful comments about every aspect of those months.

      Thanks for your kind message. I’m glad you enjoyed the show. Please do seek out Koyama Shuzo. Small brewers really need our support if they are to continue to survive, and produce great sake, in the shrinking market.
